A sicily wine: Florio's Passito di Pantelleria

Last sunday we open this wine: a wonderful Passito di Pantelleria from Florio's wineyeards.

Zibibbo grapes are picked at full ripening from the wineyeards grown on Pantelleria island (Sicily, Italy). They are let to dry under the strong September sun for about twenty days. This is followed by the vinification as per the old tradition. The short contact with the skins and the slow fermentation complete the process together with the aging for some months in small oak barrels. The result is a Passito wine with unique intensity of perfumes which is ideal to accompany desserts and flavoursome soft cheese.
